Savory Mushroom Onion Soup
serves 4
Ingredients
- 5 C Crimini mushrooms, sliced
- 2 T olive oil
- 2 ea Vidalia onions, quartered
- 2 cl garlic, minced
- 1 ea bay leaf
- 1/2 C dry white wine
- 4 C beef broth
- 1 t apple cider vinegar
- 3 ea fresh thyme sprigs
- 1 T flour
Instructions
- Saute the onions and mushrooms in olive oil in a large soup pot until the onions are a soft brown.
- Reduce heat to low, add the garlic and cook for 5 minutes.
- Add all but the flour, season to taste, and bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove the thyme sprigs, stir in the flour, mix well, plate and serve.
