Savory Mushroom Onion Soup

Instructions

  1. Saute the onions and mushrooms in olive oil in a large soup pot until the onions are a soft brown.
  2. Reduce heat to low, add the garlic and cook for 5 minutes.
  3. Add all but the flour, season to taste, and bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Remove the thyme sprigs, stir in the flour, mix well, plate and serve.
